Red Snapper Recipe - Mexican Style
Very impressive baked fish recipe featuring red snapper! We are big fans, hope you'll give it a try too. Interesting combination of olives, capers, jalapeno and cherry tomatoes, with added lime juice - oh delicious....

Broiled Red Snapper
We always watch out for John's amazing seafood recipes. He is always very inventive with flavours while making it all look so easy. Why don't you give it a go too?

Well, this broiled red snapper recipe may be just what
the doctor ordered. Normally we don’t want to cover up the delicate flavors of
the seafood, but in this case, we have no choice. It’s not like you can’t tell
you’re eating fish, but close enough.

Recipe - Pan Fried Snapper with Ginger

PAN FRIED SNAPPER WITH GINGER
INGREDIENTS:
2 x 160 g SNAPPER FILLETS
1 tbsp curry powder
2 tbsp oil
1 cm cube ginger, sliced finely
2 cup snow peas, sliced
1 small zucchini, sliced
4 tbsp coconut cream
Preparation Time: 15 Minutes
Cooking Time: 10 Minutes (Stove Top)
Serves: 2
METHOD
1. Coat fish fillets with traditional curry powder and oil, pressing the curry powder evenly onto the fish.
2. Place the coated fish in a hot frying pan, and allow to cook for 4 minutes on high. Reduce the heat to medium then gently turn the fish.
3. Add the ginger, snow peas, zucchini and coconut milk to the pan and allow to cook for a further 4 – 5 minutes.
4. Serve each fillet on a bed of rice, then top with vegetables and drizzle with coconut sauce.
