Prawn Curry with Coconut Milk & Fennel Seeds

We wanted to share this curry recipe with you for ages. And look, spring is here already. But the nights are still chilly so if you still crave some winter warmer goodness, give this COCONUT CURRY a go. This recipe serves two so consider the amount of ingredients should you host a dinner party.
INGREDIENTS
500g prawn meat
¾ cup coconut milk
½ tsp indian mixed spices (garam masala) and 1 1/2tsp turmeric powder
2 crushed garlic cloves, 1 finely chopped onion
1 tsp fennel seeds, 3 curry leaves
Salt and sugar to taste
Chopped chilli / coriander for garnish

METHOD
1. In a pot or sauce pan, brown onion with all spices, add 1/3 cup of water and bubble on low heat until the oil begins to separate.
2. Add prawns and heat for one minute, add more water if needed.
3. Add coconut milk and simmer until it starts boiling. Season with salt and sugar, depending on your preferences.
4. Before serving, top with chopped chilli or coriander.

Garlic Cream King Prawns - 4 Ingredients

We have been waiting to see more seafood inspiration recipes from the 4 Ingredients Facebook team... and finally there it is - GARLIC CREAM KING PRAWNS! Hope you all enjoy it ;)

ONLY 4 INGREDIENTS NEEDED
* 2 cups (370g or 13oz) rice
* 16 raw king prawns, peeled and de-veined
* half a cup cup (125ml or 4.2fl oz) cream
* 1 tbsp. (2 cloves) freshly crushed garlic

Prawn Recipes from SBS Food - Perfect for Easter


King prawn salad with fresh peas

INGREDIENTS
3 red onions, cut into wedges
100ml balsamic vinegar
100ml extra virgin olive oil
1 bunch asparagus
400g fresh peas, shelled
6 tbsp almond paste
800g King Prawns
6 blood oranges, peeled, segmented
200g fresh rocket leaf
Extra virgin olive oil, for tossing
PREPARATION: 
  1. Preheat oven to 180°C.
  2. Place the red onion in a bowl. Toss in the balsamic and olive oil. Season with salt and pepper. Roast, in pre-heated oven, for 10 minutes, stirring midway through cooking. Remove from oven and set aside to cool in the juices.
  3. Bend one asparagus spear until it snaps. This will tell you where to cut the rest of the bunch, discard the woody ends. Toss the spears in olive oil, salt and pepper. Grill the asparagus until it starts to blacken slightly. Set aside.
  4. Blanch the peas in a saucepan of hot water for 30 seconds. Refresh under cold running water, and set aside.
  5. To make the dressing, in a bowl, combine the almond paste, about ¼ cup of olive oil, salt and pepper. Whisk until emulsified.
  6. Toss the prawns in olive oil, salt and pepper. Grill for 1 minute on each side and place into a mixing bowl.
  7. Place all the ingredients, plus the rocket, together in a bowl. Drizzle over the almond dressing. Garnish with blood orange to serve.
