Recipe - Pan Fried Snapper with Ginger

We had some FRESH SNAPPER CUTLETS on special, the only thing missing was a nice recipe to go with it...

From Junior MasterChef Australia's extensive collection of seafood recipes, we really liked this one:
 PAN FRIED SNAPPER WITH GINGER

INGREDIENTS:
2 x 160 g SNAPPER FILLETS
1 tbsp curry powder
2 tbsp oil
1 cm cube ginger, sliced finely
2 cup snow peas, sliced
1 small zucchini, sliced
4 tbsp coconut cream

Preparation Time: 15 Minutes
Cooking Time: 10 Minutes (Stove Top)
Serves: 2

METHOD
1. Coat fish fillets with traditional curry powder and oil, pressing the curry powder evenly onto the fish.
2. Place the coated fish in a hot frying pan, and allow to cook for 4 minutes on high. Reduce the heat to medium then gently turn the fish.
3. Add the ginger, snow peas, zucchini and coconut milk to the pan and allow to cook for a further 4 – 5 minutes.
4. Serve each fillet on a bed of rice, then top with vegetables and drizzle with coconut sauce.
